What started as a pandemic pop-up is now a successful brick-and-mortar pizza-and-cake restaurant in Echo Park. Folks Pizza owner Joey Booterbaugh is a longtime student of dough fermentation. Sparta’s pizza looked different than any I can remember as its perfectly cooked cheese – placed above the toppings – and thin pan-type crust gave the entire pizza a beautiful golden brown appearance. Hiding underneath this golden exterior lurked incredibly flavorful sauce that oozes out with most bites.

Growing up in Michigan, a native of the Detroit suburbs, Ryan spent a lot of time cooking with his grandparents learning baking, grilling and pierogi making skills. Danny Boy’s comes from one of NYC’s former Meatball Shop co-founders and is an homage to East Coast red-sauce roots. It’s in an unusual space, tucked away in an office building atrium, which is a lovely place to have takeout pizza. We decided to bring real food to the pizza crust and the result was the birth of some pretty amazing never been seen before pizzas! Our Roast Pumpkin and Prosciutto and our Greek Lamb and Rosemary pizzas have almost become as famous as some of our superstar clients! The brick oven that was already there gave me the idea to open up a pizzeria. I had seen similar ovens at neighborhood pizzerias. The problem was I now owned a coal burning oven that had been inoperable for years and needed significant cleaning and repairs.
With a little persuasion from Giuseppe I decided to sell my club and restaurant and move to LA. From grilled pizza to handmade pasta, all of our dishes are made with fresh in-season ingredients which calls for an ever changing menu. Thanks Pizza is some of LA’s unfussiest pizza, but it is pie-making at its best. The wood-fired dough comes as a cheeseburger or Hawaiian pizza, along with the simple pepperoni. Looking back, it’s incredible to see how LA’s unique pizza culture developed over the decades. It likely started in the early ‘80s with Wolfgang Puck’s then-innovative smoked salmon pizza at Spago. But in recent years, Los Angeles saw a notable rise in non-Californian operators making the Westward leap by introducing New York, Detroit, and Neapolitan-style pizzas. Locals also threw formidable hats in SoCal’s pizza ring. The result is Los Angeles being a hotspot for excellent pizza dough topped with local ingredients by chefs who obsess over sauce and delicious pies.
